Carrot Halva
Serves 4
Ingredients
450 grated carrots
1 tablespoon of sultanas (optional)
8 cardamom pods
1 tablespoon crushed unsalted pistachio nuts
750 ml milk
3 tablespoon caster sugar
3 tablespoons oil
Cream (optional)
Method
Heat the oil in the frying pan and add carrots, cardamom pods and the milk mixture all the time.
Add sugar, sultanas, crushed pistachio nuts. Stir fry the mix for another 2-3 minutes.
Bring the carrots, cardamom pods, milk to the boil in the saucepan. Lower the heat and simmer for about an hour or until the liquid has gone, stirring regularly.
Spoon the halva into a bowl and serve warm, with a spoonful of cream.
