Milk Tart
Makes two large pies. You can use a rich pastry base OR make your own. Try using 2 boxes of butter biscuits (about 30 biscuits, crushed) with about 150grams of melted butter. For a better taste, Try exchanging half the butter biscuits for ginger/oat biscuits.
Ingredients
1/2 cups milk
3 large eggs
1 1/2 cups castor sugar
2 1/2 rounded tablespoons cornflour
2 1/2 rounded tablespoons cake flour
1teaspoon vanilla essence & 1 teaspoon almond essence
1tablespoon margarine
Directions
Bring the milk and sugar to the boil together in a large pot. Beat the eggs in a separate bowl. Sift the flour and cornflour into the eggs and mix to a smooth paste. Add some of the boiling milk to the egg mix, until they are the same temperature. Add the egg mixture to the rest of the milk and return to the heat. Boil for 3-4 minutes. If lumps form, whisk while boiling. Remove from the stove and stir in the margarine and vanilla. Pour into prepared pie dishes and sprinkle with cinnamon. Serve warm or cold.
